Looks like a great prep......I am not sold on the bacon though. Seems like overkill. And, there won't be as much crusty bark under the bacon, correct?. I also don't wrap my butts while cooking. I generally cook them at 225-250 until almost done, and then lower the temp to 200, and finish them. I wrap them in foil once they are off the cooker and resting.
