Easy Cream Puff Pastry

½ cup zero trans fat butter flavored shortening
Dash of salt
½ cup boiling water
1 cup all purpose flour
4 eggs
1 cup powdered sugar
Small amount of milk
almond or orange extract to taste

Once water is at a boil, add in shortening and salt. Bring to boil again. Reduce heat to simmer and add flour all at once while stirring vigorously until a ball forms around the spoon and dough leaves sides of pan clean. Remove from heat and add eggs, one at a time, hand beating thoroughly after each addition. Continue to beat mixture until thick and shiny and start separating from the spoon.

Split dough in half; reserving one half and drop spoonfuls of dough from the other half onto a parchment paper lined cookie sheet in the shape of a circle. This recipe makes 2 pastries so do the same thing with the remaining half of dough.

Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake 20 minutes more. Make glaze by combining powdered sugar, milk and flavoring, drizzle over cooled pastries.
