More fun with Street Food - here, frying poori - and rolling poori dough. When I lived in Chennai (1993-1994) I learned to make poori. The dough is simple and you roll it, then paint it with gee, then fold it, roll again and repeat several times. When you fry it - the layers expand making a bubble - the hallmark of poori
