I like to add Vegenaise instead of olive oil to make the mixture creamy. Vegenaise is made with grapeseed oil which is a by-product of wine-making. the egg yolk substitute is almost certainly made in wine country somewhere and shipped to a plant. as in, with trucks. which use... gasoline. making or even buying mayonnaise is less resource-intensive despite this lovely guilt-assuaging mythology. oh vegans...
