My favorite is spicy cajun sweet potatoes. They're spicy and savory with a hint of sweet. I love these at thanksgiving, but mostly I snack on them like popcorn.
1" diced sweet potatoes
olive oil
Brown sugar
cajun seasoning (I like Tony Chacceres)
Italian seasonings
Cayenne Pepper
black pepper
other spices you like (cumin, paprika, etc.)
Mix and put in a 13x9 and roast in the oen 325 - 400 F for like 30-40 minutes. Basically just cook until fork tender, or go longer if you like them softer.
