My first Double pull (26 secs) on a La Marzocco Mistral (modified by Kees van der Westen) after grinding the Victors house blend on a Macap M5. This is shot @ Victors Espressobar in Haarlem, NL (http://www.coffeetogo.nl/) during one of their barista workshops.

Any comments on the technique / tamping is very welcome!

  • Very true! I found out that a very light tamp works best for me (on a pidded rancilio silvia that is) with a fine grind on my Super Jolly.

  • ...and you wait before putting the portafilter onto the machine...? It loses temperature when away from the machine... nerdie, yes, but a colder filter makes shorter espreso shots, baby!

  • You fiddled quite a bit with the tamping, and you tamped quite hard, I would have ground a bit finer and tamped lighter, but otherwise it looked quite nice. :) More speed and a more controlled tamp (you shouldn't need to lean into it, and you should be golden.
