CHINESE HAM STYLE soaked for 9 days ,changing the water 2 x a day and 3x day on last 2 days, boiled twice discard the water and simmer with big can pineapple juice,can of pineapple cut and its juice,dark brown sugan,3 atable spoon of black pepper corn,4 anice,4 bayleaves,2 cups of sugar,beer,10 cloves,cool-add brown sugar and plancha -iron with torch to carmelized the sugar....hmmmmm!

  • @d0p3xMERCurY What I mean is the head should be in opposite direction facing our front door entrance not the kitchen so need to turn it the other way around...:D

  • very nice... but not what Im looking for to see....... I 'm trying to lear how you people cut the LECHON.... this does not help my search.... but I must say... it looks great....

  • @chefsabor ITraditionally in the Philippines they used cleaver cutting it on cutting board.I used strong big scissors instead,cutting straight from back top butt to shoulder,straight down to belly,2 inches apart then I cut across to have square cut including the meat, then I do the other side,once done cut meat is in between.

    Just type ..how to cut lechon..I saw 2 youtube videos..good luck..

  • @natsavali Dry cured smoked aged ham for 6 months or more need to be soak in water just like Bacalao

    dried fish to removed the saltiness and to bring it to it's natural texture.by changing the water,massaging every 6 hours will not spoil it. What do you thing about Blue cheese with molds.It's an art of cooking it and been doin it for years and in Asia. The reverse is eating raw fish,ceviche by putitng lemon...happy cooking and Merry Christmas.
