The only healthy thing in this entire episode is the 2 quarts of water used to cook the cake. Really, does the mound of cream cheese, heavy cream, butter and egg yolks really need whipped cream on top? xD

@NeenerBee If you are a dedicated Good Eats fan, you would also know that each oven, indeed, each KITCHEN, is different due to differences in elevation and oven's heat output. While AB's instructions are generally good, they should act more as guidelines, especially when it comes to cooking. At best, you should apply a thermometer to get an internal temperature reading to know whether it is done or not.
