Erin McKenna, founder of BabyCakes NYC, uses agave nectar (also known as agave syrup) in her baking where others use sugar. Its sweeter than sugar, so she says to use 2/3 cup for every cup of sugar that a recipe calls for, and to make sure that you add it to the wet ingredients, not the dry.
