  • I love the temper chocolate by hand, but once I have kids I think getting something like this would be a little easier.

    I agree. I have this same machine and you are to put the seed chocolate behind the baffle and remove any extra after chocolate is tempered. Chocovision also recommends it this way in there vid.

  • I have the revolation 2, and I don't finely chop the chocolate as shown here, and also I put the seed chocolate behind the baffle (in same as the main batch is placed before it melts)

    Is that just to speed up the process? I imagine it takes less time, but i get tempered chocolate in my machine as well...

    also- the seed chocolate is supposed to be removed after the chocolate cools down to a certain point. if you chop up too much chocolate and mix it straight in, aren't you cooling it too much?
