But, how are Atoms measured? Literally with a camera, literally with looking at them? I don't get that part...no one ever explains it

Unless its bouncing off of a residual trail, like a vapor trail. At such a small sub-atomic level, a vapor trail from a fast moving object could be just as solid as a gel or more. That would be enough to alter the pattern. In other words, if I as a person was smaller than an atom, the vapors or smoke from a bullet or jet could be just like water-waves or thicker. I don't know, I'm just theorizing. I'm not an expert. However, there still remains the question of observation of the particles.
