But why only in Lima and not in the myriad of other cities which also underwent (or are ungoing) industrialization? There is no clear soot layer and, since it perches high it provides no evolutionary advantage of mimesis. Chimbote, with a larger smoke/particulate problem should shown a similar pattern.

I think this requires a more imaginative answer.
