Episode 109: "Castillian Hog Heaven"
Footloose Mark and Claudia are in hog heaven as the road trip winds through Castilla y Le?n. Mark and Claudia hunt down a plate of incredible Jam?n Ib?rico in Salamanca's Plaza Mayor. Their interest perked, they decide to head right to the source- a traditional farm that raises the famous black-footed pigs. Their porcine pilgrimage continues to Segovia where Bitty and Bassols eat like emperors in the shadow of the city's 2,000-year-old aqueduct. Feeling a little pigged-out, Mark and Claudia return to Basque country, unearthing a medieval cathedral and sampling Vitoria's finest tapas.

Please, dont speak about you dont know... baby pig and baby lamb are special dishes from castilian and segovian gastronomy... go to Valladolid for eat it, its like go to Bilbao for eat paella, just a crazy thing.
In othern term, Candido is not the best, try with "Jose Maria´s Restaurant" or with "La Portada de Torrecaballeros", simply the best...

That restaurant in Segovia is the famous Candido. There are some others in Castilla y Leon that prepare not only baby pig but baby lamb, and it is much better. If you want to try this, visit Valladolid.

they don't show it in this video, but in the same episode they went to the restaraunt in SEgovia near the acqueduct, and i went to it two years ago...they prepare the pig in front of you, it was absolutely amazing
