1 lb. 85%lean Beef 25 pts.
1 C. Onion 0pts.
3 C. Salsa 3.5 pts.
1 1/4 tsp. Chili Powder 1 pt.
1 1/4 tsp. Cumin 1 pt.
2 C. Corn 5 pts.
16 oz. FF Cottage Cheese 8 pts.
1 1/2 C. FF Cheese 5.5 pts.
12 sm. Corn Tortilla 7 pts.
Total: 6-7pts.
Ser. 8-10
Directions
Brown your meat until cooked, add the onion and cook for about 4 mins until they are soften.
Add in your salsa, corn, spices. Cook together for about 8 mins just until your mixture is all hot.
Spoon some of the mixture in to the bottom of a 9x13 baking dish, layer the corn tortillas on the bottom add half a container of cottage cheese and then meat mixture, then layer tortillas, cottage cheese, meat, shredded cheese, top with remaing meat mixture and cook in a 375 degree oven for 40 mins

  • does it have to be cottage cheese, it looks delicious but i dont like cottage cheese . what else could i use

    No you don't have to use cottage cheese, you could use ricotta cheese. or if you do not like the little curds you can blend it up and then it will be smooth. But in a normal lasagna it is ricotta cheese or cottage cheese.

    It is Pace, just normal chip salsa, I bought a big bottle at Costco, cause you use a lot in this recipe. Also it isn't hot.

  • I'm a chef no one washes Ground meat.. You lightly rinse regular meat parts in cold water then marinade etc.
