practice, learning things from others, dvd's, etc. No industry right now. I will be putting together a reel soon that aren't these kind of quick speed sculpts but actual characters both game an cinematic. Other things will be on the reel as well but stray a bit from the character stuff I do here.
the modeling/rought in was about 45-60 mins, i did some retopology on it in topogun (not shown, topology wasn't needed for the end result) then about another 20-30 mins on the skin details and such. Polypainting was roughly 45, and about 15 mins for each different color to composite in photoshop.

looks pretty sick! Surprised how early on you finished the modelling.
