Nevermind just read that the Hulu plus app doesn't support AirPlay. That's ridiculous considering you have to pay for it.

The airplay mirroring is a cool option for the games that use it but for watching videos in Hulu I would leave the mirroring switch off so the video isn't forced to the iPads 4:3 ratio on your widescreen tv.
