When our kitties do that they are actually "tasting" a smell. They have what is knows as a "Jacobson's organ" in the roof of their mouth that allows them to taste smells. Snakes have them also, which is why their tongues are always in and out of their mouth...they are tasting the air in front of them as they move along. Geeky biology girl over and out!
