Its plenty edible. Nitrogen makes up 78.1% of the air we breath, its perfectly harmless.

Alternatively, you can pour LN2 into the bowl, allow it to settle and stop boiling vigorously, and add the ice cream (liquid) drop by drop, giving you dippin' dots.

And btw, that's too much protection for LN2. It's actually not that dangerous (assuming you don't put your hands in it). Working in a chemistry lab, I pour more liquid nitrogen daily than most people do water, and the trick is just to not wear anything that soaks. So jeans and those gloves are indeed a bad idea. If gloves are needed, there are cryogenic gloves that resist LN2 soaking.

Won't the LN2 freeze and kill the salmonella??

Don't add eggs unless you plan on making a custard...with means you need to heat the eggs in the cream...both making the ice cream thicker and killing the Salmonella.

@Masterdude658 the liquid nitrogen evaporates as soon as it touches the mixture so none actually is in the ice cream

I want to do this. I do not have a dewer of my own ($600 to $900). Exactly how do I go about getting LN2?

Airgas will rent you a dewar. You need to put down a deposit, and you have to cart it away in a truck. But you can rent a truck, too. That's how I did it.

gloves are not smart unless they are tight fit. if LN gets in then it stays there on fingers.
