Vu Nguyen dismantling a 18lb yellowtail in minutes. This beautiful fish was caught in mexico waters brought back for one reason... SUSHI.

  • alrighty folks for those who don't work in sushi restaurants. it's one cutting board. fish and veggies. it's how well you clean you sushi board after preparing fish. Yellow, red, blue and white cutting boards, yeah if you work in a regular restaurant that deals with raw beef, chicken and all those other stuff. Just letting you know U.S. and Japan have different standards. It's an art. When I do sushi I cut fish on one side and veggies on the other. I always keep a sani bucket by me.
