To begin making this Southern-Mediterranean tomato recipe, first sprinkle the cooking pan with olive oil. Sauté finely diced onions in this oil. Then add the following ingredients one by one: add finely diced mushrooms, then garlic, Italian sausage, and finally red chili flakes. Let the sausage cook. Add bread crumbs to the finished sausage pieces in the pan. Cool the mixture before you begin the next step and learn exactly how to cook stuffed heirloom tomatoes.
Take the tomatoes and scoop away the insides. Add a sprinkling of salt and pepper to the cavity. Keep the upended tomato on a paper towel so the juice can drain away.
