Trying to think of how to make this for one... 0.5oz absinthe, 0.5 oz lime, 0.5oz syrup. 2oz water?

Your proportions are correct, but that would make a pretty small drink. Go with 1 ounce each of absinthe, lime juice and simple syrup, plus 4 to 6 ounces of water. Here's the full recipe to make a single serving: liquor.com/recipes/the-green-beast/.

A bartender should always have clean hands, so it shouldn't be an issue if he touches an ingredient.

when drinking with friends, only drinking a specific cocktail is kind of boring. probably better to mix varieties of small amount of drinks.
