Personally though I use hi-temp teflon thread sealer on all head, intake, thermostat, and water pump\timing cover bolts. Probably not as important for a engine that will be apart again in the not too distant future (race purposes).

Chevy head bolts need a sealer on the thread so your correct on thoses. Big Block Ford head bolts don't go into coolant. I'll agree with the teflon sealer as I use it on my customers cars as well.
