Actually the word "Kinnor" in modern Hebrew means violin.
Other than that... looks fascinating - probably way more complex than playing the guitar - but I guess frets and fretboards weren't invented 2000 years ago :)

how do they make the strings for those things?

Initially I found it mind-bending blocking the wrong notes, instead of what I am used to, fretting the right notes. This style of chording and strumming may not be historically correct, but I like it. And it is handy for singing, particularly more contemporary music.

SHV inferred from the archaeological evidence (and the melodies probably even more) that single notes, simple intervals and arpeggiated chords were used. That is essentially the same as the three techniques you've worked out.
A little bit of virtuoso work such as you do might well work with something like David's Elegy (sung in this mode)...but one would have to be really careful! Consider what accompaniment SHV used: the "chords" are arpeggiated with the fingers.
