http://www.behindtheburner.com Yes, octopi have beaks. Well, at least the best ones do...the ones Chef John DeLucie uses for his Mediterranean masterpiece. Octopus doesn't have to be as exclusive as The Waverly Inn although it can be just as good when it comes from Mylo Gourmet. He removes the center and magically, a properly charred octopus takes the shape of a starfish. Who wouldn't be hooked? With olives the size of plums and a side of Chef DeLucie, octopus could easily become the new chicken.


"Technique: Chef John DeLucie's favorite octupi (polpetti) from Spain are flash-frozen. This technique breaks down the muscles and makes them soft, tender and juicy. The end result is a buttery, soft bite--not a rubbery chew.
Tip: Grilling the octopus and charring the tentacles adds a certain depth and smokiness.
Tip: Octopus should spring at the touch when it's done cooking.
Technique: Scoring the octopus between the tentacles expedites the cooking process. The score marks also add flair and give the dish an artistic element.
Trick: DeLucie uses Cerignola olives from Puglia, Italy. They're sweet and plum-like, and add an interesting complexity to the dish."

  • was the octopus marinated? with what, and what spices, no wine vinegrette? how was the octopus softened?

  • Wow! A restaurant that you need to "be someone or know someone" in order to partake of their cuisine? Wow! What a completely douchebaggy statement and/or policy. One thing I love about food is that it brings people and cultures together. I personally despise the concept of excluding those who may not "be somebody or know somebody" A real chef is an artist and any true artist wants to share the beauty they create with as many as possible.
