This guy pauses, I'm not sure if he is letting the software catch up or if his computer is slow because I've seen people use it without any pauses and it works just as well.
Even for someone who types 80-100 words per minute on average (120 if I really really try) this program looks very intriguing

Certainly not. In fact the version 9 does not require any training at all and right from the beginning you will be able to get 95% accuracy. But very importantly you need to understand how to talk to the computer.
To talk to the computer, you need to speak the sentences, at least speak couple of words together and of course don't slur or mumble the words.
Try using the Dragon in Microsoft Word where it gives maximum of the spoken language commands and also with Internet Explorer.
