Our documentary is based on our definition of Globalization and Thomas Friedmans concept of de-ethnicization in the food industry where various fast food restaurants attempt to portray international cuisine. Globalization makes it difficult for ethnic restaurants to maintain authentic food identity; this is displayed by certain Mexican, Asian and Italian fast food restaurants that have Americanized the experience and cuisine of the original culture.
We chose Taco Bell as a prime example of de-ethnicization of Mexican food. By first-hand experience, we found that ordering an item off the dollar menu is nowhere near the cultural experience that you receive when digging into a savory plate of your favorite Mexican specialty dish. We filmed Taco Bell in Auburn, and researched different production and consumer facts that support our statement of Taco Bells de-ethnicization of Mexican cuisine.
Traditional Hibachi restaurants are known for the experience; however, Hibachi Express is an example of de-ethnicization as it has diminished the value of dining by making their food available at the drive-thru. Billy Callaghan provides his expertise in Chinese culture by explaining the differences between traditional Asian food and American Asian Food.
Pizza is an example of how America has shaped food from Italy. These restaurants offer options that meet the consumers desires but are not true to the Italian culture. Olivia Martin, who studied and lived in Italy twice, offered us her personal experience with the differences in authentic and Americanized Italian cuisine.
Americans wants and desires have forced authentic cuisine to mold into a less authentic version of the true culture. Through Mexican, Asian, and Italian food, we found de-ethnicization change the food industry as a result of Globalization.

  • aka, we eat something we get inspired and things evolve over time. People "A" have a dish, we eat dish, we get idea from it, creating dish "B". However, look at most Italian food in Italy it isn't always about pasta, red tomato sauce, but look at most American Italian places you see the same old boring recipes that do give you the impression that's what their food is all about. Which isn't true. Never knew that Italians like hot foods from our foods ... I blame the Italian-americans from NY.

  • Okay, there are some points I do disagree with in this video. I do admit that Italian is mostly shallow versions, you can create what they create because they use the same old ingredients. However, pizza isn't a prime example. Pizza was brought over by Italian immigrants who moved to New York, it was when people began to really eat pizza that it began to evolve into what it is today. You can still find pizza similiar to real Italian pizza, we can't be held to keep things exactly the same.

  • I think your right italian and mexican food here is so waterdown to the point now it tastes generic. its okay but nowhere as good as real mexican and italian foods because it takes time to make good food you aint going to get that with fast food these days no way.
