  • You can also add chocolate to the hot milk to make it a chocolate custard dessert. More fattening though

  • Additional tips:

    I use a juicer to extract the ginger juice.

    If you don't want to use a juicer, you can also use a blender to mince up the peeled ginger. Then transfer the blended ginger into a sieve and press out the juice.

  • Ginger Milk Curd Recipe (Simplified ) For each cup of 2% low fat milk, needs 1 tablespoon of sugar and 1 to 2 spoonful of fresh ginger juices with skin peeled. Beware if too little ginger juices, milk will not set. Boil milk for 4 minutes at medium heat. Or microwave milk for 50 sec Then stir in sugar Pour directly into the bowl with the ginger juice. Warmer milk will make it firmer. Optimal temp is 142 to 150 F for correct hardness. Wait for 2 minutes for it to set Michele

  • Hi, Michele, thank you for showing this. One question that bugs me, though: I've heard that it wouldn't work if the ginger is too young. They say only old ginger (the one with a lot of fibre and much hotter) that gives a lot of sediments in the juice can set the milk, and clear ginger juice (without the sediments) wouldn't work. Have you noticed any differences?
