Usually, when shooting music videos there isn't any sound coming from the instruments. Its all coming through a PA system so they can reference where they are in the song. They basically strum along on the instruments that aren't plugged in or turned on. The only instrument that you might hear in a video shoot is the drums. Even if they muffle them down, you can still hear them.
