Blender Tutorial Series - Part 13 - UV Mapping

Nice tutorial, but I have a problem.
I got a nice human model which I want to use in my game.
This model already has an UV Map that covers all his body, like in the video.
What I need is:
1st - Delete the current UV Map (looks easy, but I can't do it).
2nd - Make a single UV Map for the skin, another one for the clothes, and another for the hair (the model needs to be customizable).
Is it possible to separate the current UV Maps into multiple other Maps from the "UV/Image Editor" window?

Sorry for asking this, but how can I make a group of each parts of the model so that I may click and select them easily (and find them easily after unwrapping), having the model as a 1 whole mesh?
Or must I split it into different meshes?
Any tips?

When I split the area, went into the UV/image editor, selected teture paint, went into edit mode then selected my mesh. I tried to unwrap it and nothing happened. It's not showing up in the UV/image mode. Why is this, and how can I correct the problem?
Also i'm using a newer version of Blender. So fallowing along is a tiny bit difficult sometimes. XD Great tutorial btw.

quick question though. Both sides of my mesh are the same in every way (thanks to the mirror modifier) and my uv's are the same size, i know this could be because of the size of the uv template, im just wondering if i can make them the same exactly ?

@ward7299 I was wondering something can you give a charter 2 texture maps and change in between them? like to make the charter blush or turn green when there sick that sort of thing or is there a better way to do that?

I have been able to do the uv mapping following your tutorial but I have a strange issue. My character was composed of two meshes the head and the body. I joined the meshes together and made my uv map etc. but the jpg will only apply to the body. I can nologer change the color or texture of the head. Have I missed some step in rejoining the meshes?

when you joined the two meshes together, it applied two different materials to it. go to your editing panel (F9) and you'll probably see a "1 Mat 2" in the "link and materials " area. delete the second one, and you should be fine.
