The flame releases thermal energy, which is conducted by the copper sphere containing water. The water reaches its saturation temperature and becomes saturated vapour and water (steam). The steam pressure is then bled off the boiler and fed into nozzles. The steam converges and then diverges, drops in pressure and increases in velocity. The kinetic energy of them steam is now imparted into the turbine blades and reverses direction (assuming its an impulse stage) producing a turning moment :)
