She possibly could have done this because its just easier. It wouldn't be for low fat reasons because egg's don't have much fat at all. There primarily protein and low in calories. Hope this helps any questions you may have had.

Why do you use egg substitute?

Eggs actually do have fat in them, they are approx 76 calories and 35-40 of them are from fat, however it is a good fat and not the reason I use the exchange. I sub due to cholesterol levels there is about 200 mg in an egg and 0 mg in the egg beaters. I eat eggs from my chickens and try to sub in baking to reduce cholesterol, thanks for watching and asking!
