  • It is suggested that Kombu contains glutamic acid on which the acidic side gives up a negative charge to proteins in which it is present. This makes the protein more water soluble and hence more easily digestible. Kombu also adds some important minerals and provides some of the flavor. It is available at most natural food store and Japanese or asian markets. You could of course leave it out with little affect on the texture and nominal effect on taste.
