There is a recording of the legendary Alfred Cortot playing it with two hands, a bit weird as he had the technique to play it as written.
But that is history. I believe no one else has recorded it playing with both hands.

Principally I agree with you. However, it is not much easier to play it with two hands. Some of the chords are written for left hand and not really comfortable for the right hand. I know many compositions by Franz Schmidt who also wrote for Wittgenstein. (All his scores are to be played by the left hand only) Basically it is easier to really use just one hand. Of course, the technical difficulties are overwhelming, but this is also true if you play with two hands.
