What can you do with all those tomatoes? Can them! In this video, New England Culinary Institute Chef-Instructor Tom Bivins demonstrates how to blanche, peel and process fresh tomatoes. Then Peggy Thompson of Peg's Pantry shows market visitors how easy canning can be by making salsa, then canning it right before their eyes. The canning supplies were donated to the Farmers Market by the Ball Canning Corporation. The Capital City Farmers Market was one of 50 markets across the USA to receive a grant from Ball Canning - the only market in Vermont!
