In this video, Betty demonstrates how to make a sandwich cookie, using Towne House crackers, spread with cream cheese frosting and coated with melted peanut butter. Yummy!

Ingredients:

16 oz. box Towne House crackers
12 oz. container whipped cream cheese frosting (icing)
12 oz. bag peanut butter chips

Spread the flat (unsalted) side of a Towne House cracker with a small amount of cream cheese frosting. Make it into a sandwich by placing another Towne House cracker (flat side down) on top of the iced cracker. Make as many sandwiches as you would like. Melt the peanut butter chips in a double boiler. If you do not have a double boiler, just heat them in a saucepan over low heat, stirring often. When the peanut butter chips are melted, place one cookie sandwich at a time in the melted peanut butter chips. Use two spoons to coat thoroughly, top and bottom. Remove the coated cookie to a flat plate or tray that has waxed paper on the top. Continue until all cookies are coated (or you run out of melted peanut butter). Let the cookies sit at room temperature, and they will set up. If you want to hurry up the process of setting up the cookies, place them in the freezer or refrigerator. When properly set, place them on a serving dish. Serve with pride!

  • @nkr1695 Hi Angie! Yes, this video was a long time ago, and thankfully, we have made some improvements!  I still have lots of ideas of recipes I want to make. I agree that Ritz crackers would be great with this combination!

  • @Travis25601 Thanks for the compliment on my kitchen. Having a big, well-organized kitchen was really important to me when we built this house back in 1991. It is getting some age on it, and I have replaced the refrigerator and the dishwasher, but the rest is original.
