Never drink water from roof runoff without filtering it out. Birds and small critters still do shit on roof. Any time water touches any exterior surface expect it to be contaminated with wildlife waste.

SODIS WATER!!! sun naturally will kill off any bacteria in a liter bottle of water within 6 hours!

Why exactly is the water undrinkable after two years?

I appreciate the series. Everyone should be concerned about water storage. I would like to mention however, that in time of need all water is usable. With boiling, filtering, chemical treating, it can all be used. Water can be stored in clean trash cans with lids. Whatever it takes to have and store water. It might have to be filtered or boiled but at least you have the water. Water from a roof can contain bird feces etc. It would still need to be cleaned in some way, but you would have it.
Your best bet is to flush out several gallons in hot water tank once a year. You only need to flush out water until it comes out clear and also open the overpressure valve several times to flush out sediments and to check it isn't sticking or leaking. This is you best source of safe drinking water and the hot water is self sterilizing for most waterborne diseases.

@googlesbitch Water heater water is about 120 degree's, not hot enough to sterilize. But the water has already been treated (unless there was a break in the line or some other malady) and YES do flush yoour water heater at least every two years!

I mean water on a bottle that's from a raw source. That's what the U. N. Teaches in third world countries. This has helped to close down entire dysentery wards.

@rosrychaplet AAaaaaaaaaaaa ok I know what you are talking about. Yes "sun bleaching" water in a clear bottle will kill most (not all) bacteria......But it still leaves two other pathogens. Cryptosporidium and giardia.

My question for you is, what is bacteria doing in there in the first place?

It's not undrinkable, even bad water is "drinkable" What happens is that any of the methods used to make it "storable" will begin to diminish. For example the chlorine that was present (done by the Water District) to keep bacteria at bay, has oxidized and is not longer effective. So you can stretch the 2 year mark.....but not by much. If you over chlorinate the water when you store it, or add a additional preservative, you can store the water for longer, up to 5 years.
Rotate often.
