As a 15 year italian chef, I can say that this guy is terrible. He doesn't know how to pound veal for one, for two, he deglazed way to soon, and for 3 piccata doesn't get any of those ingredients except for the capers.
Please don't support the Veal Industry! It's cruel sick and wrong! Chances are the guests you are trying to serve feel this way too! Please find another option than eating a baby calf pulled from its mother at 3 days old and kept anemic and sick just so the meat stays pink. sad
Brett, you are so funny and the food is wonderful. Veal piccata is one of my favorite dishes and my favorite to serve to my dad. It is nice to see you do not stand on pretense as a chef..you are just a regular guy who is a demanding chef.
