That should work, but I've tried this and the Dremel isn't really able to cut wood screws bigger than 1/4". I have set up a similar mechanism using a table router and a lead screw from an old table vice, and that works well on dowels as big as one inch. The materials (wood dowels) are a little too flexible to support a cutter at the correct pressure - if the tools was mad with iron gears, I am sure it would work.
