As far as I'm aware, only turmeric and tamarinds are spices that Arab cuisine attained from India. Everything else, be it olive oil, cumin, lemons, paprika, or saffron, are native to age-old Mediterranean tastes.

It's 'spring roll pastry' it's thicker than phyllo dough. It can be difficult to work with phyllo dough in this recipe. the 'spring roll pastry' is great and you can find it in the frozen section in the supermarket.

if you live in the US, you can find it in the frozen section of the supermarket or at a middle eastern store.
