Beer Can Chicken

Two 4-pound chickens

2 cans of beer

6 cloves of garlic

Extra virgin olive oil

Favorite dry rub

Dry Rub

1 tablespoon dry mustard

½ tablespoon salt

1 tablespoon garlic powder

½ teaspoon red pepper

½ teaspoon white pepper

2 tablespoons chili powder

1 tablespoon paprika

1 tablespoon black pepper

½ teaspoon coriander

3 tablespoons brown sugar

Make sure chickens are clean and clear of any giblets. Coat each chicken well with the extra virgin olive oil and dry rub. Open the beer cans and pour out about ¼ to ½ of the beer, crush the garlic and place in the beer cans. Once you have everything prepped, insert the cans in the cavity of the chickens. Place the chickens on indirect heat with coals on ether side and cook at 300 degrees for three hours. Add a little hickory on top of your coals to give it a little smoky flavor. After you pull it off the grill, let it sit for about 5 minutes, carve and serve.

  • And make sure to set your grill up for indirect heat.

  • Also, make sure to rinse the chicken and pat dry before applying the olive oil.
