  • Absolutely no tips as to what blade to use, how deeply to cut, the angle of the blade, ect.

    To properly score bread, a lame should be used to prevent cutting too deep into the dough. Regular knives are also rarely sharp enough to score the dough without tearing it. Proper scoring is done at a 45 degree angle instead of a 90 degree, and the cuts should extend completely from one side of the boule (round loaf) to the other to avoid the "Hershey chocolate kiss" effect, where the center points up.
