banana cake

preheat oven, gas mark 4, 350*F, 180*C

grease and line two 2lb loaf tins.(base measurement 3 1/2'' X 7 1/2 '' or 8.5cm X 19cm)

8 ripe bananas peeled and mashed in a large bowl
6oz (150g) softened butter or marg
8oz sugar, brown or white
2 eggs
1 lb (450g) plain flour
4 teaspoons baking powder
4oz (110g) raisins or sultanas
4oz (110g) chocolate drops

put all the ingredients except the raisins and chocolate drops in a bowl and mix well. you can do this by hand or with an electric whisk or hand blender. fold in the raisins or sultanas and chocolate drops. pour into two greased and lined 2lb loaf tins and bake for approximately 50 minutes untill they're firm and golden brown.

use the best ingredients you can afford!

this cake freezes well, use within a month, doesn't last that long in my house!
you can also add 4oz chopped nuts if your kids will tolerate them. walnuts are best but any will do!

  • as all my kids have been such fussy eaters at one time or another i do have a few tricks up my sleeve! just thought i'd share this one. it is a very nice cake. and ALL those bananas! glad you enjoyed it. :)

    it was quite funny trying to photograph the process while g was serving up sunday lunch. lol! it's one of the easiest cakes to make. just as well really as it really doesn't last long...
