Mango and strawberries in a chicken salad with goats cheese???

No, Ben hasn't gone crazy, this salad really does work. A lot of salads can be quite boring and lack flavour but not this one. It takes hardly any time to prepare and is great for using up leftover cooked chicken.

I love this! I make a similar chicken and mango summer salad, but I use halved cherry tomatoes instead of strawberries and spinach instead of the rocket greens and also put in avocado chunks and a quarter of a red onion. Doesn't need any dressing because of the mango, but you can always go aioli. My boyfriend loves it and it's perfect for lunch on a hot day, and naturally pretty, with all the colours. For dinner, just serve with toasted bagel slices spread with a bit of mayo. So frakken good.

The one that made me facepalm the most was someone asking if they could use smooth peanut butter instead of chunky in the ice cream from the arctic roll video. As if getting rid of tiny chunks of peanuts would undermine the entire structure of the dish or something. Ridiculous.

Love what you guys are doing and the channel. However, as a mango lover, it pains me to see how you guys handled the mango in this video and butchered it on other videos. You don't have to chop off the tail of the mango. It is perfectly edible. I was going to show you guys how to cut a mango, but I came across EricksonFarm's video titled "How to Cut a Mango". I hope that helps.

This looks amazing! Unfortunately I have the great misfortune of being from the subcontinent and being ALLERGIC TO MANGO (I know, it's horrible). Can anyone recommend substitutes that will still maintain the character of the salad?
