@Landotter1 maybe its the fact his chick is from texas and it gives us a happy vibe. from my travels i hear brisket was the throwaway meat. we do it up here at my casa

@jason33x : I smoke it till it reach about 78*C then wrap it with foil. Then cook it till it reach
88-90*C. Then the meat is nice and soft.:) Enjoy!

as a Texan its nice to see Texas BBQ get some love and its awsome that you love brisket b,c it is so good!
but this realy isnt the Texas way to BBQ a brisket lol.

@smokingbrisket1- Pulled off at 88-90 degrees in the thickest part.
