I'm assuming what happens in hwoarangs ending and jins ending actually are canon.

Not quite. Jin's ending is canon. Hwoarang's ending, on a literal level of Devil Jin blowing up Hwoarang's motorcycle, is not. Jin transforms during the tournament immediately after being defeated (rather than after the tournament as suggested by Hwoarang's ending). Devil Jin then defeats Hwoarang.
