This is another one of my more frequently made dishes. What I love about making mac and cheese from scratch is that you can add whatever cheese you want. I kept it pretty traditional using sharp white cheddar, and some fontina cheese for texture. I used cellentani instead of elbow because I like the longer tubes and the extra surface area of cellentani. The panko topping adds a nice crunch on top, and serving it from a large enamel casserole adds more to the homey-ness of it all.

Mac and cheese makes a great side dish for grilled meats! But it's also a great stand-alone item, too.
