What I described like a dummy rear view mirror in reality is a dummy radio transceiver: close up even show its little antenna.

It isn't entirely correct.

Looking at 1:56 the Bree's Pinto rear view mirror is clearly visible.

Sabrina is driving a real car on a real street in a external scene.

I guess the close up's scenes were filming in a studio and driving a dummy car, so rear view mirros is removed in order don't interfere with the beautiful Kate Jackson's face.

Seem to me in this case the rear view mirror is changed with a dummy one placed on dash behind the steering wheel.

Same for the others characters.

This is my favorite Angels car chas scene. It's so ridiculous that I can't watch it enough.
