Mr. Trotter is CEO and chef of the eponymous Lincoln Park restaurant he founded while still in his 20s and which recently celebrated its 20th anniversary. While Mr. Trotter and his cuisine have won numerous awards and achieved an international reputation, he is more likely to compare himself to Miles Davis than Julia Child.

What he is talking about ( excellence and the pursuit of it ) reminds me of something Gordon Ramsay said about motivation. It was easier for Gordon to get out of bed and go to work in a high-quality restaurant even if the work was harder than to go to a crappy restaurant even if the work was easier. This didn't have to be a fine dining restaurant, just a place that strove to serve well-cooked food.
