材料:韭菜、乾魷魚、豬肉絲、米苔目200g、紅蔥酥、開陽(蝦米)、蔥、白胡椒粉、雞粉、醬油、米酒、糖

做法:
1.用少許油爆香開陽、乾魷魚,炒出香氣之後再加入肉絲炒勻,再加入紅蔥酥與蔥。
2.米苔目加入鍋中一併拌炒,沿鍋邊淋上醬油,嗆出香味,加入200cc水,炒勻,轉小火再蓋上鍋蓋悶2分鐘。
3.最後加入米酒、雞粉、胡椒粉、糖、韭菜,炒勻即可起鍋。

  • 苔目又稱「米篩目」,是客家粄食的代表之一。好的米苔目是由太白­粉與在來米粉加冷水柔成的粿,經過水煮後製作出來的,鹹、甜、冷­、熱都可以吃,可說是一年四季的美食。因為米苔目是煮熟的,所以­要吃的時候只要用冷開水沖泡清洗一下就可以料理食用了。 :)
