it does not look like a stir fry to me, not a Chinese one for sure...
it is more like a stew- the onion melts away by the time the cabbage goes in the pan.
give it another try at high heat to get the wok hei flavor- in essence stir fry:
1. garlic+ ginger+ meat- remove; 2. blanch carrot and beans then stir fry [onion whit carrots and beans with cabbage]; about 1 cup at a time 3. thicken a corn starch+ soy sauce+ whatever in the wok; 4. add all the rest and mix to coat. 5. compare!
